  Curried Salsa

This fruit-based curried salsa is intended to be mixed with rice. It is a great dish to include in a buffet. And like other salsas it is well suited to variations.

Ingredients

1 Tablespoon peanut oil
¼ Cup finely diced onion
1 Teaspoon minced garlic
Tablespoons curry powder
1 Teaspooon cayenne pepper
Dash of cumin
½ Fresh pineapple, peeled, cored, chopped and puréed (about ¾ cup)
½ Cup pineapple juice
3 Tomatoes
2 Teaspoons brown sugar
4 Bananas (about 1 pound), peeled and diced (about 2 cups)

Process

Heat the oil in a large sauté pan, add the onion, garlic, curry powder, cayenne, coriander and cumin and sauté over medium heat for about 5 minutes. Add the puréed pineapple, pineapple juice, tomatoes, sugar and sauté for 10 minutes over medium heat until thickened. Let cool, transfer into a mixing bowl and fold in the bananas.
