Thanksgiving
Gingered Pumpkin-Pear Soup

This low fat recipe highlights the flavors of fall.

Ingredients

Cup sweet onion, chopped
|
|

|
Teaspoons fresh ginger, grated
|
|

|
Tablespoons butter or margarine
|
|

|
Ripe, sweet pears, peeled, cored and sliced
|
|

|
15 ounce cans pumpkin, drained
|
|

|
Cups vegetable broth
|
|
|
Salt and pepper to taste
|
|
|
Process
|

|
In a large saucepan, cook onion and ginger in butter or margarine. Don't brown.

Stir in pears and cook 1 minute more.
|
|

Stir in pumpkin and vegetable broth. Heat to boiling. simmer 20 minutes
|
|

|
Cool slightly and pureé in food processor or blender.
|
|

|
Return to pot.
|
|

|
Serve piping hot.
|
